It was early morning; the bar had just closed about four hours ago… The sun had just come up a little while ago making it around eight in the morning. But there was plenty of work to be done before the dinner rush. With it being the winter season, getting fresh ingredients was rather hard. Broccoli, cabbage, clementines, chicories, escarole, mandarins, navel oranges, larger sized radishes such as daikon, rutabagas, jerusalem artichokes, winter Squash and pommelos were all good winter produce that tasted the best during this time of they year. Other root veggies like onions and potatoes were still good because of cold storage…
Takato stood in the kitchen with a white board laying on the counter in front of him as he debated a menu within his mind. First thing was first, the appetizers; Sesame Chicken Dip with pita chips, Creamy Black Bean Salsa with corn chips, artichoke salad, Antipasto. He wrote those down on the board before he picked up a cup of tea he had sitting on the counter beside the board. Coming up with a different menu each night was a challenge but one he liked having. This was his escape from the world… from the demands placed upon him.
Sure this place was a tavern and not some five start restaurant but he still could make decent good food here, give people something more than what they were expecting from a place like this… After sitting down his cup of tea, he went back to work on the menu jotting down the main course and of course dessert all with some kind of tie to the winter season and what truly in season fresh produce he could get.
After his menu was complete, he walked over to the phone and worked on making a few phone calls to place orders of what he would need that he already didn’t have around the kitchen. Luckily for him, he had a fresh herb garden that was growing in a small room just off to the kitchen so fresh herbs were always around. By the time he got all that taken care of, almost two hours had passed.
As he stood there staring at the menu yet again, he stretched with a yawn. It had been a late for him. Unable to sleep, he spent the night carving out clay figures and making sure they were set up to dry properly before he ended up falling asleep at his work table an hour before his alarm went off and he came here. Thinking about the things that would take the most time to cook and working for what he had here while he waited for the delivery the rest of the stuff, he went to work on the citrus sorbet which would need time for the flavors to blend together in the freezer.
